Suran Fry is a crispy, spiced yam dish thatβs popular in many Indian households, especially in Maharashtra, Kerala, and Tamil Nadu. Itβs easy to make, slightly spicy, and pairs beautifully with dal and rice or even as a tea-time snack.

πΏ Ingredients (Serves 3β4)
- Suran (yam) β 300 g (peeled and sliced into medium-thick pieces)
- Turmeric powder β Β½ tsp
- Red chili powder β 1 tsp
- Coriander powder β 1 tsp
- Cumin powder β Β½ tsp
- Garam masala β Β½ tsp (optional)
- Rice flour / Rava (semolina) β 2 tbsp (for crispiness)
- Salt β to taste
- Oil β 3β4 tbsp (for shallow frying)
- Lemon juice β Β½ tsp

Step 1 β Prepare the Yam
- Peel and cut suran (yam) into medium-thick slices or wedges.
- Boil in salted water with a pinch of turmeric for 5β6 minutes until just cooked (not mushy). Drain and let cool.
Step 2 β Spice Mix
- In a bowl, mix turmeric, chili powder, coriander powder, cumin powder, garam masala, and salt.
- Sprinkle the spice mix over yam slices.
- Add rice flour/rava and a few drops of lemon juice. Mix gently so the pieces are coated.
Step 3 β Fry
- Heat oil in a pan for shallow frying.
- Place yam slices in a single layer and fry on medium flame until golden brown and crispy on both sides.
- Remove and place on tissue to absorb excess oil.

Serve hot as a side dish with dal-rice, sambar-rice, or chapati. You can also serve it as a crunchy starter with a sprinkle of chaat masala.
