
Ingredients:
- ½ cup finely chopped ginger
- 2–3 green chilies, chopped
- Lemon-sized tamarind (soaked in 1 cup warm water)
- 2 tbsp jaggery, grated
- ½ tsp turmeric powder
- 1 tsp chili powder
- 2 tsp coconut oil
- ½ tsp mustard seeds
- 2 dried red chilies
- Curry leaves
- Salt to taste
Method:
- Heat coconut oil, fry chopped ginger and green chilies until golden brown.
- Add turmeric, chili powder, and stir.
- Pour tamarind extract, add jaggery, and simmer until thick & glossy.
- Temper mustard seeds, red chili, curry leaves in oil and pour over.
