πŸ₯˜ Olan (Mild Ash Gourd & Cowpeas Curry)

Ingredients:

  • 1 cup ash gourd (kumbalanga), diced
  • Β½ cup cowpeas (vanpayar), soaked & cooked
  • 2–3 green chilies, slit
  • Β½ cup thick coconut milk
  • 1 cup thin coconut milk
  • 1 tbsp coconut oil
  • Few curry leaves
  • Salt to taste

Method:

  1. Cook ash gourd with thin coconut milk, green chilies, and salt until soft.
  2. Add cooked cowpeas, simmer for a few minutes.
  3. Stir in thick coconut milk, switch off heat (do not boil after adding thick coconut milk).
  4. Drizzle coconut oil and add curry leaves on top.
