🥘Inji Curry / Puli Inji (Sweet & Tangy Ginger Curry)

Ingredients:

  • ½ cup finely chopped ginger
  • 2–3 green chilies, chopped
  • Lemon-sized tamarind (soaked in 1 cup warm water)
  • 2 tbsp jaggery, grated
  • ½ tsp turmeric powder
  • 1 tsp chili powder
  • 2 tsp coconut oil
  • ½ tsp mustard seeds
  • 2 dried red chilies
  • Curry leaves
  • Salt to taste

Method:

  1. Heat coconut oil, fry chopped ginger and green chilies until golden brown.
  2. Add turmeric, chili powder, and stir.
  3. Pour tamarind extract, add jaggery, and simmer until thick & glossy.
  4. Temper mustard seeds, red chili, curry leaves in oil and pour over.
